Espalion
Espalion, capital of the Haut Rouergue region, is set in an unspoilt environment in the heart of the upper Lot valley and at the foot of the Monts d'Aubrac. Largely destroyed after the French Revolution, the village was rebuilt thanks to the determination of its inhabitants. Stroll along the cobbled streets and admire the rich historical heritage: the Château de Calmont d'Olt (11th century), the Pont-Vieux d'Espalion (12th century), the Renaissance palace with its pepperpot roof (16th century), the string of century-old houses and the old tanneries. Don't miss the lively Friday morning market, where you can sample local Aveyron specialities.
Estaing
On the banks of the Lot, nestling in the foothills of the Aubrac, Estaing has been awarded the label of one of the "Most Beautiful Villages in France". This medieval town boasts an imposing castle, houses with lauze roofs and a Gothic bridge listed as a UNESCO World Heritage Site. Don't miss: the Saint-Fleuret Procession on the 1st Sunday in July, a historical re-enactment and religious custom celebrating Estaing's patron saint.

Saint-Pierre-de-Bessuéjouls
Situated between Espalion and Estaing, Saint-Pierre-de-Bessuéjouls is a charming village on the edge of the Lot valley. It is home to Saint-Pierre church, notable for its 11th-century high chapel on the first floor of the bell tower. Afterwards, take a stroll through this peaceful village and discover its traditional pink sandstone houses. A perfect place for lovers of heritage and tranquillity, offering visitors a glimpse of rural life in Aveyron.
Saint-Côme-d'Olt
Saint-Côme-d'Olt, a medieval jewel in the Lot valley, deserves its title as one of the "Most Beautiful Villages in France". Visit the flamboyant Gothic church with its rare flamed bell tower, the manor house of the Sires de Calmont with its 14th-century towers, the Château de Castelnau which now houses the town hall, and the Chapelle des Pénitents, once a hospice for pilgrims, now an exhibition hall.
Castelnau-de-Mandailles
Situated on the slopes of Aubrac, Castelnau-de-Mandailles offers panoramic views over the Lot valley. The village is dominated by its 19th-century church. Its only street leads to the Château de Mandailles, of which only the keep remains. Outside the village, signposted footpaths lead to the Aubrac plateau, the Lot valley and the Castelnau-Lassouts-Lous lake.
Laguiole
Laguiole, famous for its hand-crafted knives, is a must-see when visiting Aveyron. Visit the famous bee cutlery factory to discover two centuries of expertise. Don't miss the statue of the Laguiole Bull, the symbol of the village, and the church of Saint-Matthieu. Laguiole is also famous for its PDO cheese, which you can sample in the local cheese dairies. A real immersion in Aveyron culture!

Le Cayrol et l'Abbaye de Bonneval
Le Cayrol, a peaceful little village between Espalion and Laguiole, is best known for Notre-Dame de Bonneval Abbey. This 12th-century Cistercian abbey, set in the middle of a wild valley, has been a place of meditation and the artisanal production of famous chocolates since 1878. Enjoy the serenity of the setting as you visit the abbey church and the monastic shop. The bucolic setting and hiking trails make for a rejuvenating getaway.
Conques
The medieval town of Conques, listed as one of the "Most Beautiful Villages in France", offers a unique spiritual atmosphere. This medieval jewel in the Aveyron, a major stopover on the Pilgrim's Way to Santiago de Compostela, is famous for its abbey church of Sainte-Foy, a masterpiece of Romanesque art with its sculpted tympanum, highlighted by the stained-glass windows of Pierre Soulages. The goldsmith's treasure, unique in France, is one of the finest of the Middle Ages (reliquaries and sacred objects designed by the monks of Conques). The cobbled streets and half-timbered houses complete the visit.
